Makes 10 servings
No sugar added angel food cake is often available in most supermarket bakeries. As a substitute, use no sugar added pound cake although the calorie content may be slighter higher..
1 10-ounce no sugar added angel food cake
1/3 cup raspberry fruit spread
5 packets (10 teaspoons) NatraTaste Blue sugar substitute, divided
1/4 cup extra dry sherry
1 4-serving size package sugar free vanilla pudding and pie mix
2 cups fat free milk
2 cups fresh strawberries, quartered or sliced
1 cup fresh blueberries
1 cup whipped (aerosol can type) light cream
1. Cut angel food cake horizontally into 3 pieces. Put fruit spread on top of 2 slices, reassemble slices and cut into bite size pieces. Randomly place in the bottom of 2-quart serving bowl. Stir 3 packets NatraTaste Blue into sherry, drizzle over cake cubes and toss.
2. Prepare vanilla mix, according to package directions for pie, using fat free milk. Pour vanilla pie filling over cake. Cover and refrigerate at least 2 hours.
3. Toss remaining 2 packets NatraTaste Blue with berries; spoon onto cake. Add whipped cream in small dollops.
