Summer Pasta Salad with Dijon-Balsamic Dressing

Makes 6 servings

A hint of sweetness combined with Dijon mustard and balsamic vinegar make a delightful dressing for this pasta salad. Substitute any small cut pasta you have on hand, such as elbow or bow ties.

1/2 pound cooked shell pasta
1 cup quartered cherry tomatoes
1/2 cup partially peeled, diced cucumber
1/3 cup sliced scallion
2 tablespoons balsamic vinegar
2 tablespoons water
1 tablespoon minced fresh rosemary
1 1/2 tablespoons olive oil
1 1/2 tablespoons Dijon mustard
2 packets (4 teaspoons) NatraTaste Blue sugar substitute
1/2 teaspoon salt
1/4 teaspoon black pepper

1. Combine pasta, tomatoes, cucumber and scallion in a large bowl.

2. Combine remaining ingredients in a small jar with a lid. Shake; pour dressing over salad and toss. Cover and chill at least 1 hour. Stir before serving.
