Orange-Pineapple Ambrosia Click here for the print-ready version
1 cup unsweetened shredded coconut 9 packets NatraTaste Blue 4 large seedless oranges, peeled and cut into sections 1 can (20 ounces) juice-packed pineapple chunks, drained 6 strawberries, for garnish Mint sprigs, optional
1. In a small bowl, combine coconut and NatraTaste Blue.
2. In a 1-1/2 quart glass serving bowl, arrange alternate layers of oranges and pineapple. Sprinkle each layer with the coconut mixture.
3. Refrigerate, covered with plastic wrap, several hours before serving. Garnish with strawberries or mint sprigs. Makes six 1-cup servings.
