Watermelon Lemon Shaved Ice Makes 10 servings This light, refreshing dessert can be made up to a month in advance, and kept on hand in the freezer for the family or unexpected company. This recipe can also be made in a ice cream freezer according to manufacturer’s directions. 8 cups watermelon chunks, seeds and rind removed 2/3 cup fresh lemon juice, divided 13 packets (8-1/2 tablespoons) NatraTaste Blue sugar substitute, divided 1. In a blender on low speed, process 1 cup watermelon, 1/2 cup lemon juice and 8 packets NatraTaste Blue just until smooth. Add remaining watermelon, 2 cups at a time, processing until smooth. 2. Pour into a 9-inch square or round baking pan. Cover with aluminum foil or plastic wrap and freeze until partially frozen, about 2 hours. Transfer mixture to a chilled bowl and, with a mixer at high speed, beat until fluffy. Return to baking pan, cover and freeze until hard, at least 3 hours or overnight. 3. When ready to serve, let sit at room temperature for 10 minutes and, using a spoon, scrape ice into serving dishes. Pour 1 tablespoon lemon juice and 1/2 packet NatraTaste Blue over each serving.
