Nectarine Blue Cheese Salad with Lemon Poppy Seed Dressing Click here for the print-ready version
Makes 4 servings
This salad looks best if served on individual plates, and is perfect as a side accompaniment for company brunch.
4 cups spinach leaves 1 large, ripe, peeled nectarine, sliced 1/2 cup crumbled blue cheese 1/3 cup thinly sliced red onion 1/3 cup nonfat light lemon yogurt 1 tablespoon sour cream 1/2 teaspoon poppy seeds 1 packet (2 teaspoons) NatraTaste Blue sugar substitute.
Arrange spinach, nectarines, blue cheese and onion on individual salad plates. Combine remaining ingredients in a small bowl. Spoon on dressing just before serving.
