Winter Turkey-Broccoli Salad 2 cups diced cooked turkey breast (about 10 ounces) 4 cups cooked broccoli florets 1 medium red or yellow bell pepper, seeded and sliced 1 large red delicious apple, cored and coarsely chopped 4 tablespoons lemon juice 1 tablespoon dijon-style mustard 2 packets NatraTaste Blue 1/4 teaspoon ground white pepper 2 tablespoons minced shallots 3 tablespoons olive oil 2 tablespoons water 1. In a large bowl, combine turkey, broccoli and bell pepper. Sprinkle the chopped apple with 2 tablespoons of the lemon juice; add to the turkey. 2. In a small bowl, combine the remaining 2 tablespoons lemon juice, mustard, NatraTaste Blue, pepper and shallots. Whisk in the olive oil and water. Pour dressing over turkey mixture and toss. Chill 1 to 2 hours before serving. Makes six 1-1/2 cup servings.
